Just had dinner with the fiancé and her mum. I made toadlets in the hole. Basically take 6 good pork sausage and release them from their skins, mix them with olive oil, salt and pepper and your fresh herb of choice, I used thyme and oregano, mix all this together with your hands and make them the size of ping pong balls, these are the toadlets. Now roast these at 200c in a nice deep tray with 2 cored and chopped apples and a good glug of olive oil and a drizzle of honey for 20 mins or so until they are nice and golden. Mean while make a basic Yorkshire pudding mix I use 4 eggs 200ml whole milk and enough flour until it reaches thick paint consistency and seasoned with salt and pepper. Take the golden toadlets from the oven and cover them with the batter, cook for a further 20 mins until golden brown and bubbling and then serve. I served it with roasted cubed potatoes and gravy and accompanied with a dram of Jura 10 it was perfect and I think everyone else loved it as there was nothing left in the tray :) give this one a go it's quick, simple but utterly delicious!
